I remember growing up pancakes were always a breakfast treat. There was no better brekky than elderberry and banana pancakes covered in mixed berrys and smothered in honey. I was the odd one out sometimes instead opting for peanut butter and honey “Dont knock it until you’ve tried it”.

As I got older I admit I got lazy and often opted for the pancake pre made mix instead and pancakes fell of the weekly menu as it never managed to make the grocery list on the fridge.

Fast forward to now as I sit at the kitchen table glaring at three aged bananas and a bottle of elderberry syrup and a light bulb moment occurs. Why not make banana pancakes with what I have in the pantry.

So here it is my 5 ingredient banana and elderberry pancake recipe:

This banana and elderberry pancake recipe is so simple yet jam packed with flavour.


  • 4 tbsp of elderberry syrup
  • 3 bananas
  • 3 eggs
  • 3 tbsp of self raising flour
  • 1 tsp of baking powder


  • Break up the three bananas into a mixing bowl
  • Mash the bananas with a potatoe masher
  • Drizzle in the elderberry syrup
  • Add the eggs to the mixing bowl and mix thoroughly
  • Add the flour and baking powder mixing until it thickens
  • Pre-heat a frying pan and add in 1 tbsp of butter
  • add pancake sized dollops of the mixture to the frying pan
  • Cook on one side until you see small bubbles rising to the surface
  • Flip the pancake and cook for a few minutes on the other side until golden brown
  • Serve with mixed berrys or if your game peanut butter and Australian honey.


  • Play around with the heat of the pan. I prefer a medium to low heat so they cook through without burning. It definitely takes some playing around with to get the cooking temperature right.

Are banana pancakes better than regular pancakes?

Ive found that the banana pancakes hold a lot more moisture after cooking resulting in a fantastic texture. The strong banana definitely is a welcome flavour as well when combined with caramel topping and mixed berries. I do admit though they are a bit less forgiving in the pan. I definitely burnt a few before I got the temp right.

Can I add fruit to the mixture

Absolutely, I find pressing blue berries into the pancakes while cooking is a fantastic addition. There is a video by Pro Home Cooks that showcases a similar recipe with blue berrys added.

Why do my elderberry and banana pancakes stick?

If your pancakes are sticking to the pan than you may need to add some more flour to the mixture. It often helps to grease the pan well with butter before hand to reduce stickage.
