What are cornichons?
Cornichons are a particular type of gherkin with a bumpy exterior and pickled while young. The cornichons are typically cured in salt overnight, doused in vinegar, and left to soak overnight. The mixture is then brought to a boil and sealed away in jars with herbs and spices. Mad Mountain for example chooses to use a combination of mustard, turmeric, coriander and ginger to. inject flavour into their cornichons.
How are cornichons different from pickles?
Cornichons are not quite true cucumbers as they are pickled when they are only an inch or two in length. This makes them the perfect snackable size to add to cheese and crackers.
