So its a Sunday night and you have a whole work week ahead of you. You open the fridge and you have absolitely noting for lunches this week.

This is where this mexican lasagne recipe comes in incredibly handy. Its enough for dinner and your work lunch tomorrow morning and the best part is that it takes bugger all ingredients to make.

What to serve with this mexican lasagna recipe?

This mexican lasagne has a little bit of heat so good pairings are typically foods that provide a bit of balance to the pallet. A guac or a light salad are both great bets.

If you are feeling a bit more creative you could add tortilla chips and guac as a layer in the lasagne to add a bit more vartiety and to save some room on the plate.

Description

This mexican lasagne recipe found the perfect balance of heat without getting too overwhelming. It was so simple to make and tasted fantastic.


Ingredients

·         2 tsp of olive oil

·         2 brown onions finely chopped

·         2 crushed garlic cloves

·         500g of beef mince

·         400g of chopped canned tomatoes

·         1 tbsp of cumin

·         10 flour tortillas

·         2 avocados thinly sliced

·         1 cup of sour cream

·         2 cups of 3 cheese mix or grated cheddar

·         2 tbsp of Mad Mountains Peri Peri Sauce (Optional)


Instructions

1.     Heat the olive oil in a large frying pan over medium heat.

2.     Add the onion and the garlic to the pan and cook until fragrant.

3.     Add the mince and break up using a rubber spatula stirring constantly until it begins to brown.

4.     Add the tomato, cumin and reaper sauce to the pan. Keep stirring to ensure that the flavours and mixed consistently through the beef mince.

5.     Preheat the over to 180 degrees.

6.     Place two tortillas on the bottom of a greased baking tray. A 3 litre tray should do the trick.

7.     Add half of the mince on top of the tortillas in the baking tray.

8.     Cover the mince with another 4 tortillas.

9.     Add the remaining mince and cover with another 2 tortillas.

10. Spread our the sliced avocado and top with the remaining 2 tortillas

11. Spread the sour cream on top and finish with evenly spreading the three cheese mix.

12. Bake for 35 minutes or until golden brown.

Notes

  • I absolutely loved this recipe although next time I think I will try the avocado as a guac to keep with the Mexican theme. 
  • I was surprised how much Mexican lasagna I had leftover. I was set for lunches the next day.

What are additional filler options for Mexican lasagna?

The benefits of cooking a sauce that is jam packed with flavour is that you can add a variety of additional ingredients to help bulk up the mine in the recipe to help fill your pan

Additions may include:

  • Corn seprated from the cob
  • Portabello mushrooms (thinly diced)
  • Diced capsicum
  • Black beans (great for added protein)

Next time I will definitely be tempted to add beans to the mix for the added protein benefit and some extra volume for the dish.

This dish usually takes about 30 minutes in the oven although make sure you keep an eye on it just in case. Once its golden brown on top its good to go.

Its definitely a lot easier lightly baking ingredients that have already been pre cooked in the frying pan.

Can I freeze mexican lasagne

As with most lasagne dishes that always freeze well when saving some for later and this mexican lasagne recipe is no exception.

The lasagne will be able to safely last in a air tight contained for up to three months.

Honestly though I usually prefer to eat this dish fresh as its so quick and easy to make. You can always scale back the ingredients to reduce the serving sizes if needed.

Is it worth adding a peri peri or hot sauce

Im usually pretty soft when it comes to spicy foods and I loved the addition of Mad Mountains Peri Peri sauce.

You can add a variety of hot sauce combinations, salsa or taco sauce to experiement with a few new flavours for the dish.
