Simple and Easy Vegetable Korma Recipe

Vegetable Korma’s are well renowned for being jam packed with flavour and instead of opting for my typical chicken korma recipe I decided to use up those vegies in the crisper and try out a vegetable korma recipe. This rich, creamy and flavourful recipe can be made in under 30 minutes and is incredibly simple. You literally just throw all of the ingredients into one pan.

What is vegetable korma made of?

Vegetable korma is a Indian dish made of potatoes, peas, carrots and literally any vegetables that you have in your fridge. Yoghurt and or cream is typically added for that creamy flavour and texture.

This vegetable korma is jam packed with spices creating strong aromatics and certainly doesn’t fall short on flavour. This recipe is perfect for anyone looking for a quick healthy recipe to use up some of those vegies being neglected in your crisper.


  • 4 tbsp of ghee or vegetable oil
  • 2 onions, chopped
  • 2 garlic cloves, chopped
  • 1 tsp of of fermented chilli or 1 fresh red chilli
  • 1 tbsp of grated fresh root ginger
  • 1 can of crushed tomatoes or two peeled tomatoes
  • 1 large potato cut into chunks
  • Half of a cauliflower
  • 1 tsp of ground tumeric
  • 1 tsp of ground cumin
  • 1 tsp of ground coriander
  • 1 tsp of garam masala
  • 1 tsp of Asian vegetable and turmeric stock (can substitute with 200ml of vegetable stock)
  • 200 ml of full cream
  • 25 grams of fresh coriander


  1. Heat the ghee in a large saucepan over medium heat. Add the chopped onion and garlic, stirring for 3 minutes.
  2. Add the chilli and the grated ginger cooking for another 4 minutes to infuse the flavours. Side note how amazing does fresh ginger smell.
  3. Add the tomatoes, potato, cauliflower and spices stirring for a further 3 minutes.
  4. Add the stock and bring the mixture to a boil.
  5. Reduce the heat and simmer for 25 minutes. I found that the cauliflower breaks down great if you seal in the heat. I admit I was worries about all the cauliflower until this step.
  6. Stir in the cream and cook stirring for another 5 minutes.
  7. Serve with rice and garnished with coriander


  • I found that chopping up and grating the ingredients before hand definitely helped as each step is only a few minutes apart.
  • Try using other vegetables such as green beans, carrots and aubergines to add a variety of flavours and textures.
  • If you dont have all of the spices you can suplement them for curry 2 tea spoons of curry paste.

What is vegetable korma like reheated the next day?

It was absolutely delicious the next day for lunch. If you are looking to pack it for lunch make sure you strike a good balance between rice and vegetable korma while mixing it thoroughly through the rice to immerse the spice flavours through the rice.

Can I use yoghurt in vegetable korma?

Absolutely yoghurt is a fantastic addition to korma. Adding 200 ml of single cream and 150 ml of natural yoghurt really hits the spot with this recipe.

Can you freeze korma?

I found that korma is great to meal prep because it freezes and defrosts well and its incredibly easy to make in bulk. Make sure to portion into meal sized containers instead of freezing it all in one big block.

Is vegetable korma good for you?

Vegetable korma is incredibly healthy especially if you are adding in corn and celery to the mix. I have found that cauliflower adds an incredible amount of volume without the added calories.
