Plum Jam Cake, delicious sponge cake sandwiched with cream and locally made Davidson Plum Jam. A slice best served with a cup of afternoon tea. This recipe is super easy to make and is a great starter for beginners or children.

You will need:
- 200 grams butter
- 200 grams castor sugar
- 4 eggs
- 200 grams flour
- 2 tsp baking power
- cream for layering

Putting together the Plum Jam Cake
- Mix butter and sugar together until light and fluffy
- Add beaten eggs, mixing well
- Mix in dry ingredients – flour and baking powder
- Grease a 9inch round tin
- Spoon cake mix into tin
- Bake at 180 degrees for 25 mins
- Once ready set aside to cool down
- Once the cake is cooled down, cut horizontally and add a layer of cream and Davidson Plum Jam.
