Elderberry juice is a fantastic addition to any pantry due to its shear versatility in a variety of recipes.
Ingredients
- 1/2 Cup of organic Sambucus Nigra Elderberries
- 1 inch organic Ginger
- 1/4 teaspoon organic ground Cloves
- 1 tsp organic ceylon cinnamon
- 1/2 cup raw Australian honey
- Muslin cloth for cold pressing or a sieve
Instructions

- Add a teaspoon of ground cinnamon for some extra flavour and a quarter teaspoon of ground cloves topped off with two cups of water.
- Bring the mixture to a boil over medium to high heat over the stove top.
- Once the liquid is bubbling you can reduce the heat and let it simmer until the liquid has roughly reduced in half. (This process takes about 25-30 minutes)
- Use a fine mesh strainer to strain out the elderberries and ginger using the back of the spoon to smush out any extra juice against the strainer collecting the liquid in a bowl.
- Let the liquid cool until your hands can touch the bowl then you can add in the honey as a natural sweetener.
- Once cooled add your elderberry juice to a jar and keep it in the fridge ready to use in your kitchen creations.

The variety of uses for your elderberry juice
I have found that having elderberry juice or syrup on hand encourages me to eat a lot healthier due to the shear diversity of healthy recipes that use elderberry juice.
Elderberry ice cream
I know what you’re thinking didn’t you say healthy? It may surprise you that the rapid adoption of ice cream makers like the Ninja Creami allows you to make healthy ice cream at home with milk, greek yoghurt, elderberry syrup and honey.
All you need to do is freeze the ingredients overnight and give them a quick blast in the ice cream maker for a healthy snack.
For some extra flavour you can also consider steeping elderberry tea in milk to infuse in more of those beneficial elderberry nutrients.
Ice cream is my weakness so this has been a lifesaver.
Elderberry Kombucha
Another great kitchen companion for your elderberry juice is a scoby for brewing fresh kombucha.
A dash of your home made elderberry juice during the carbonation process is all you need to instill those elderberry flavours while creating that fantastic deep purple flavour that looks great in beverages.
The tart, fruity notes of elderberry complement kombucha’s tangy taste, creating a deliciously balanced carbonated drink.
Beyond its flavor, elderberry juice boosts kombucha’s immune-boosting properties, as elderberries are rich in antioxidants, vitamin C, and antiviral compounds.
When added to kombucha, elderberry juice can provide an extra layer of support for gut health, reduce inflammation, and help fend off the common cold.
Elderberry & banana pancakes
I dont know about you but I always have a few left over bananas. What I have been doing lately is making elderberry and banana pancakes topped off with some elderberry jam.
